Tanzanian Style Zege



 

This excellent pizza-like omelette is a specialty from Tanzania. It makes for an excellent quick-fix meal for brunch or a light lunch/dinner. Made with eggs, fries and any additional ingredients like leftover chunks of cooked chicken, chopped cooked sausages, cheese, chillies, onions etc, this is one very versatile recipe!

Ingredients
  • 2 eggs, lightly beaten
  • 2 tsp oil
  • Fries/chips made from 1-2 potatoes
  • salt/pepper to taste

Extra Ingredients (optional)
  • chunks of leftover cooked chicken
  • chopped capsicum
  • chopped herbs
  • chopped onions
  • grated cheese
  • chopped green chillies
  • any other addition that you like..

Instructions
  • Fry the potato strips and drain on kitchen towels.
  • Lightly beat the eggs with a bit of salt and pepper.
  • Heat a small 6" saucepan, add the oil. Sprinkle the fries (and any other additions that you plan to use..don't overcrowd the saucepan) into the pan. Pour the beaten eggs to cover the fries. Cook for a couple of minutes on medium heat. Once the bottom of the zege is nicely coloured, gently ease a spatula under it and flip it. Cook some more until both sides are evenly coloured. Serve hot with some ketchup and chopped coriander.
  • PS: You can have this dish on it's own or with a side of salad or toast.
